Colombia produces specialty coffee somewhere within its borders almost every month of the year. The Andean spine creates dozens of microclimates from Nariño in the south to the Sierra Nevada in the north, and the Federación Nacional de Cafeteros has built the most organized smallholder system on the planet — more than 540,000 producing families on plots averaging two hectares.

The classic Colombian profile — clean, balanced, syrupy with red-fruit sweetness and cocoa depth — comes from washed Caturra and Castillo grown between 1,500 and 1,900 meters. But the country's specialty scene has exploded into experimental processing: thermal-shock washed lots from Huila, anaerobic naturals from Cauca, extended-fermentation honeys from Tolima.

Two harvests structure the calendar. The main mitaca arrives April through June in central regions; the principal harvest runs October through January, with Nariño and the south stretching well into March. This rolling schedule is part of why Colombia anchors so many roasters' year-round menus.

Direct trade infrastructure is unusually mature here: cooperatives like ASOPEP (Tolima) and producers in the Cauca highlands routinely ship traceable microlots scoring 86–90 to roasters from Melbourne to Copenhagen.

Brewing notes

How to brew it

A washed Huila Caturra is one of the most forgiving filter coffees in the world — try 1:16.5 on a Kalita Wave at 93°C for a 3:15 brew with a clear caramel sweetness and red-apple finish.
