Coffee was first cultivated in the Ethiopian highlands more than a millennium ago, and the country still produces some of the most aromatic, layered cups in the specialty world. Each region — Yirgacheffe, Sidama, Guji, Limu, Harrar — offers a distinct flavor signature shaped by altitude, microclimate, and centuries-old heirloom varietals that exist nowhere else.
Smallholder farms dominate the landscape: more than 4 million households tend coffee gardens averaging less than half a hectare. Cherries are typically delivered to local washing stations, where lots are aggregated, processed, and sold via the Ethiopian Commodity Exchange or, increasingly, through traceable direct relationships.
Naturally processed Ethiopians built the modern third wave — wild blueberry, ripe strawberry, and sun-warmed apricot notes that redefined what coffee could taste like. Washed lots from Yirgacheffe push the other direction: jasmine perfume, bergamot, and a tea-like delicacy that Q graders consistently score 88+.
For roasters sourcing direct, harvest timing matters: cherries ripen between October and February, with the freshest crop arriving at consuming-country ports from March onward. The Cup of Excellence Ethiopia program, launched in 2020, has further surfaced microlot producers earning record auction prices.
